Sweet Potato Pancakes

I just stumbled on this recipe and think this would be a tasty camping treat. It’s fairly simple as long as you have a grater with you.

These babies are loaded with vitamins A and C and are great served with a simple salad, applesauce or sour cream and some bacon and/or eggs.  Instead of olive oil, fry up some bacon and cook them in some of the leftover bacon fat. Talk about a taste sensation!

Now that it’s getting to be that time of year again, season up that cast iron skillet, fire up the stove and get cooking!

Tortellini Soup Post-Climbing Carb Boost

A lot of climbers want a high carb meal following a strenuous day of climbing.

Why? Carbohydrates fuel your muscles and brain and are used to provide energy during exercise. Excess carbohydrate in the system is stored in the liver as glycogen for use when fuel for exercise is needed later on. So, after a long, hard day of exercise with little food or carbohydrate intake, the body will need to replenish its stores of carbohydrate. Nothing like a big old bowl of pasta to take care of that!

Delicious & Easy Blueberry Coconut Almond Energy Bars

I was helping my husband out yesterday at a workshop he was running at the local climbing gym. This was a 4 hour workshop that ran until 7 pm. Being the foodie I am, I thought that the attendees might get hungry during that time. So, I bought some fruit, power bars,  and decided to make some energy bars to try out on them. As it turned out, everyone in attendance tried the homemade bars and absolutely raved about them.  Even gym staff came over looking to try them.

Nature’s Bounty Recipe: Ratatouille

This is a wonderful time of year when nature provides us with fresh vegetables that are full of flavor and nutrition. As a Chef and Fitness Nutrition Specialist I find this combination to be blissful! For climbers who are still getting out there camping, this will warm your souls and fill your hungry bellies with warm goodness.

This is a simple recipe that can be made at camp or made at home in advance. I have adapted it from an old Moosewood Cookbook, and it is the best ratatouille I have tasted. Served with some brown or white rice, it makes a hearty vegetarian meal. I hope you enjoy it as much as my family and I do.

Fast & Easy Soba Salad

With hot weather arriving in many places (except for Colorado, it seems), it’s nice to have a simple, cool dinner or lunch. To prepare for the weekend, I made this soba noodle salad, which is very easy to make, is filling, and tastes so good. This recipe is a good lunch size for two, but I would double it if you want larger portions. It’s also really easy to make at camp, requiring very little cleanup.
