I just stumbled on this recipe and think this would be a tasty camping treat. It’s fairly simple as long as you have a grater with you.
These babies are loaded with vitamins A and C and are great served with a simple salad, applesauce or sour cream and some bacon and/or eggs. Instead of olive oil, fry up some bacon and cook them in some of the leftover bacon fat. Talk about a taste sensation!
Now that it’s getting to be that time of year again, season up that cast iron skillet, fire up the stove and get cooking!
Sweet Potato Pancakes (2 hungry climber servings)
2 medium sweet potatoes, peeled & grated (I use the white ones)
2 T flour or rice flour
1 tsp onion powder (or grated onion)
½ tsp garlic powder
1 -2 scallions, sliced
½ tsp salt
Freshly ground black pepper, to taste
2 eggs, lightly beaten
2 T olive oil
In a large mixing bowl, toss together the sweet potatoes, flour, onion powder, garlic powder, scallions, and salt. Add the eggs and mix well to combine.
In a large nonstick or cast iron skillet heat half (1 T) of the oil over medium heat. Working with half the batter, drop by heaping tablespoons into the skillet. Cook until lightly browned on each side. Repeat with remaining oil and batter.
