Simple Spanish Rice Recipe

Thank you all for your great response to my first blog.  I’ve had a number of requests for the Spanish Rice recipe, so here it is.

This is a one pot meal that should be easy to clean up as long as you keep the heat low, add water when needed and don’t let the rice stick to the bottom of the pan.

We did a blind side by side taste comparison and found that this won out from both a flavor and consistency standpoint. Enjoy!


Spanish Rice

Makes six 1 cup servings (I’d say 2-3 hungry climbers)

2 tsp oil
½ lb ground beef
1 medium onion, chopped
1 green pepper, chopped
2 cups water
1 cup white rice
1 14.5 oz. can diced tomatoes (fire roasted are really good)
1 tsp. chile powder (chipotle or ancho give a nice smoky flavor)
½ tsp. dried oregano
1 ¼ tsp salt
1/8 tsp pepper

Heat oil in a skillet
Add ground beef, onion, and bell pepper. Cook until hamburger is light brown.
Stir in the remaining ingredients and bring to a boil
Reduce heat, cover, and simmer until rice is tender (about 20 -30 minutes)
Add more water if needed during the cooking process
